Common chicory 'Puntarelle di Galatina' (Cichorium intybus), 2g
Chicory 'Puntarelle di Galatina' (Cichorium intybus) – This chicory variety is traditionally grown in the Rome region. Puntarelle is unique among chicories because usually the young shoots are eaten instead of the leaves. Each shoot is separated, thinly sliced, and soaked in cold water to remove some of the bitterness. Puntarelle is crunchy and refreshing.
