Oat root 'Giant' (Tragopogon porrifolius), also known as Salsify. Root length 15–20 cm, diameter up to 4 cm. Cream-colored roots with white flesh. Flowers are purple-violet.
Sow outdoors directly in the ground from March to May. From sowing to harvest about 140 days. Grow in light, loose soil. It is recommended to harvest the roots in autumn after frosts, as then the roots have better taste and a more pronounced aroma. Harvesting must be done very carefully, because damaged roots are not suitable for long-term storage. The roots are eaten cooked, similar to asparagus. The roots are also pickled.
