Clary Sage 'Vatican White'. In the first season, a large silvery-gray rosette with broad, oval leaves and a typical sage aroma develops. In the second year, 75-100cm tall, flower-filled stems grow. Blooms with white flowers. Although this variety is biennial, it self-sows excellently and returns year after year.
Sow in March/April in a seed tray indoors or at the end of April/May – directly outdoors. Self-sows and returns in subsequent years.
This graceful sage also has great value as a herb: The flowers are edible raw and delicious in salads or tea. The leaves impart a strong, aromatic flavor and fragrance (aroma) to dishes. The leaves can be dipped in batter and fried in a pan.
Medicinal properties are comparable to Salvia officinalis (Common Sage): for digestion and as a calming remedy.
